Domingo Puac TocThe Roaster’s Cup, selected by our directors of roasting and sourcing, is our most recently released bean. In 2021 Zeke’s started to engage in direct relationships abroad with coffee producers and cooperatives. Many of our blends contain beans sourced from these direct relationships, but the best parts about these relationships include participation with the coffee from 'bean to brew', transparency in the supply chain, and the ability to invest in projects with the producers and cooperatives. The goal of the roaster's cup is to highlight an exceptional Micro-lot and a piece of the producer's exceptional work.
The current producer on rotation is Domingo Puac Toc from Guatemala (pictured with his son Pedrino). Domingo Puac Toc’s farm is in the small village of Panyebar, which is part of the San Juan municipality, in Guatemala. He grows his caturra and bourbon coffee trees organically, under heavy shade. Domingo has always processed some coffee, but due to limited washing space, has typically only processed coffee at lower-volume periods at the beginning and end of harvest, delivering cherries to the larger co-operative Aprocafé. This year Domingo made a significant investment, building a fermentation and washing tank on his farm, which allowed him to process his full harvest of roughly 30 bags this year. He had two lots separated as Microlots, while the remainder was incorporated into mixed producer blends from Aprocafé. |
