Domingo puac toc and Aprocafe


The roaster's cup on rotation is an exceptional Microlot from the Aprocafé Cooperative based near Lake Atitlan, Guatemala. Pictured is Pedro Isaias Gonzalez, Director of Aprocafe. In 2021, Zeke’s started to engage in direct relationships abroad with coffee producers and cooperatives. Many of our blends contain beans sourced from these direct relationships, but the best parts about this includes participation in the coffee process, transparency in the supply chain, and the ability to invest in projects with the producers and cooperatives. 

Domingo Puac Toc joined the Aprocafé Atitlán Association in 2016-2017, farming and processing his coffee with his son Pedriño in one of the group's highest altitude areas, with loads of quality potential. Due to limited washing space, Domingo typically only processed coffee at lower-volume periods at the beginning and end of harvest, delivering cherry to Aprocafé or other local buyers during peak harvest times. Two years ago, Domingo made a significant investment, building a fermentation and washing tank on his farm, which allowed him to process his full harvest of roughly 30 bags per year. This year, 12 bags of his coffee were separated as a micro lot, while the remainder was incorporated into mixed producer blends.
